HONEST BY & INFINITE SEEDS PRESENT THREE QUICK & EASY PLANT-BASED SUMMER RECIPES

Note: use organic and fair-trade produce whenever possible.
 

GREEN WILD HERBS SOUP

This super easy and quick to make soup is chlorophyll packed.
A wonderful summer detox potion that will get you glowing!

1 1/2 cups chopped fresh herbs of your choice (include some wild greens like chickweed, nettle, dandelion or whatever is in season)
1 cup chopped cucumber
½ avocado
½ cup chopped celery
¼ cup chopped scallion
2 cups green juice or water
1 tablespoon of tamari or nama shoyu (optional)
1 tablespoon of olive oil (optional)
1 teaspoon fresh lemon juice
pinch of salt and some freshly cracked black pepper

In a blender combine all ingredients. Blend well and season to taste.
Serves 2.

 

WHITE SILKY VANILLA & ALMOND MILK

Almonds are a great source of calcium, have a mellow flavor and are easily digestible, especially when soaked. Enjoy this dairy- and soy free homemade milk!

3 to 4 cups pure water
1 cup almonds, soaked overnight
1 or 2 soaked and pitted dates (optional)
½ scraped vanilla bean or 1 teaspoon of vanilla extract
pinch of salt

Blend the water and the thoroughly rinsed almonds and strain through a nut milk bag or a chinois. Pour the strained milk back in your blender and add the dates, ½ scraped vanilla bean and a pinch of salt. Your homemade almondmilk will keep well in the fridge for up to three days.

Note: you can dehydrate the almond leftover pulp and save it for later use in cookies or pastry.

 

ORANGE SWEET CREAM

(Recipe by Meredith Baird and Matthew Kenney, ‘Everyday raw detox’)

Sweet potatoes are one of the greatest sources of beta-carotene of all vegetables. Juicing it will make your drink rich and slightly creamy giving it a delicious dessert quality. Serve chilled to create a milkshake-like juice.

1 large sweet potato, peeled
4 large carrots
1 lemon
1-inch chunk turmeric or substitute 1 teaspoon dried
1-inch chunk ginger root
pinch of cinnamon
pinch of nutmeg 

Process all ingredients through a juicer.
Serves 2.
